Serves 2. Prep and cook: About 45 minutes
4 medium potatoes
2 small brown onions
Peel the potatoes and grate finely. Rinse, drain thoroughly and put in a bowl. Peel and grate onion. Mix with the potatoes. Season with salt and pepper.
Melt the butter and oil in the Omnia pan. Spoon the potatoes into the Omnia Pan in one large piece or four smaller ones. Cover and cook on high heat.
When the potatoes begin to brown underneath, turn and brown on the other side. Cooking time will depend on the thickness of the mixture in the pan, but they should be done in about 30 minutes.
Delicious with crispy bacon and ketchup or chili sauce.
